Paleo Italian Meatballs

\n\nWe have successfully completed 5 days of Whole30. I honestly think this is a wonderful way to eat.  I thought at first it would be so much more work than what I had been doing, but honestly besides using ghee instead of butter and having to postpone my Paleo Baking for a while it has been easy.  That being said it is probably because Trevor and I love cooking and cook most of our meals.  There are those days that you don't feel like cooking, but with a little planning ahead we can usually pull a meal out of our fridge with little prep.\n\nHere are a few things we had in the fridge this week. \n\n##Megan's Paleo Italian Meatballs\n\n####Ingredients\n\n1 lbs ground beef\n1/2 cup Megan's Italian Mash Cauliflower (recipe below)\n4 button mushrooms\n1/2 large yellow onion diced\n1 cup spinach\n1 Tbsp. Italian Seasoning\n\n####Method\n\n1. Set oven to 350 degrees\n\n2. Add cauliflower mash to a big mixing bowl\n\n3. In a food processor chop the mushrooms so they look like fine bread crumbs and add to bowl \n\n4. Add onion to bowl \n\n5. Chop spinach till it is fine and add to bowl\n\n6. Add beef and mix\n\n7. Roll into balls and bake for 40-45 minutes \n\n##Easy Baked Chicken\n####Ingredients \n1 lbs boneless skinless chicken breast\n1/2 cup paleo mayo (you can find the recipe here at Nom Nom Paleo )\npaprika\nchili powder\nsalt \npepper\n\n####Method\n\n1. Preheat oven to 350 degrees\n\n2. Spread mayo on both sides of chicken\n\n3. Sprinkle with paprika, chili powder, salt and pepper\n\n4. Bake 30-40 minutes\n\n##Megan's Italian Cauliflower Mash\n\nI use this for my meatballs.  I got the idea from Nom Nom Paleo.\n\n####Ingredients\n1 small head of Cauliflower\n1 cup of chicken broth\n3 garlic gloves\n1/2 Tbsp ghee\n1 Tbsp Italian seasoning\nSalt and Pepper to taste\n\n####Steps\n\n1. Cut cauliflower and rinse\n\n2. Add to pot with chicken broth and garlic  cloves\n\n3. Cook till tender\n\n4. Use an immersion blender or potato masher and smash with ghee, Italian seasoning and salt and pepper
