\n\nHere is another wonderful crock pot recipe from this week. I adapted this recipe from OMG Plaeo's Shredded Easy Shredded Pork over Caramelized Mashed Plantains. I didn't have any plantains so I improvised with some sweet potatoes. After the pork was cooked I took the stock and simmered it down to make a sauce that I then simmered the pork with. It all came together wonderfully so I thought I had to share. \n\n###Pulled Pork\n####Ingredients\n2 pound pork loin or shoulder\n1 large yellow onion sliced\n Garlic Powder \n Onion Powder\n Salt and Pepper\n3 cups beef stock\n1/4 cup paleo ketchup\n1/4 cup balsamic vinegar\n1 tbs curry powder\n1/2 turmeric\n\n####Directions\n1. Season pork generously with garlic powder, onion powder, salt and pepper. \n2. Add sliced onion, pork and beef broth to the crock pot\n3. Cook pork on low for 10 hours\n4. When pork is done shredded it with two forks and drain the broth into a sauce pan. (I used a strainer and then put the pork and onions back in the crock pot while I made the sauce)\n5. Reduce the stock by half \n6. Add ketchup, balsamic, curry powder, turmeric, and salt and pepper\n7. Reduce by another quarter\n8. Put pork in sauce and simmer for 30 minutes to an hour. (You don't have to do this step you can just serve it in the sauce. Though you may want to reduce it more or add a thickening agent like tapioca powder)\n\n
\n\n###Caramelized Sweet Potato Mash\n\n####Ingredients\n3 sweet potatoes\ncinnamon \n3 tbs coconut oil\n1/4 cup coconut milk\nsalt and pepper\n\n#### Directions\n1. Peel and cut sweet potatoes\n2. Boil sweet potatoes until fork tender\n3. Heat 3 tbs coconut oil in a skillet and fry sweet potatoes in batches \n4. Add sweet potatoes and coconut milk to a blender or food processor and puree until smooth. \n5. Add salt and pepper to taste\n\nI served the pork on top of these. It was a great meal and satisfies both sweet and savory cravings. Which is perfect when you are doing Whole30.
